Cream Cheese Bread

First, let me thank everyone who has shared your experience and even helped to troubleshoot. As kwf pointed out, the bitter taste of the crunchy peanut butter loaf could be caused by the peanut butter. Thanks also to HHB and sweet-tooth for their encouragement and sharing too.

I went ahead to bake another loaf this evening. The cream cheese bread is another popular recipe on Kitchen Capers as well. As kwf uses the super duper Vita-Mix to knead the dough, I searched around for one that relies on the breadmaker. I found a few but used cocoa's recipe in the end. As I have a tub of cream cheese spread in the fridge, I used this instead. In my haste, I forgot to reduce salt. Fortunately, that didn't affect the overall taste much. I am surprised that after so many ingredients have been added, the bread tastes quite plain. I cannot imagine how much more have been added to commercial loaves! Fortunately, I haven't been eating a lot of bread lately (have to watch food intake after a certain age, sigh).

This loaf will be given to my parents, and I shall try to bake them a loaf every week, hopefully. My sister-in-law has also commissioned me to bake for her as well. I don't mind doing so really, the more practice I have, the better my skills will be. In any case, the work's done by the breadmaker anyway :P Do watch this space, I have in mind a rather interesting project for my current skills level...

Feedback from mom (21 Mar, Good Friday): Bread was very good, especially after toasting :)

Congrats on your successful loaf, yuri! Hope your parents like it. The characteristic of this loaf is this. At first bite, this loaf seems just like any other bread. As you chew more into the bread, the fragrance of the cream cheese will linger in your mouth. Sounds like some advertisement? hahaha...actually this was what my friend told me after she ate the loaf I gave her.

btw, i use phili cream cheese (not the cream cheese spread). You can also find the original recipe for breadmaker from the link in my blog.

Oh I saw your bread machine at Tangs on Friday, it's the one that has the collapsible kneading blade right?

Hi wf, silly me, didn't notice the original recipe in your post. Perhaps kan cheong, look here and there until forget where to look :P I will have to ask my mom what she thinks of the bread. Yeah, i took a small bite, tasted normal hehe

Hey sweet-tooth, how can you see the breadmaker? Did you guess by looking that sticker? Clever gal. It belongs to my bro-in-law. They could not get it right, so let me test. I dunno if I would be getting my own breadmaker, no space to store :S wait till this bread making frenzy is over, I'll return and then venture into hand kneading...

You loaf looks good. Yes, i have to agree with regarding the flavor of the loaf, can hardly taste the cream cheese..another favorite loaf i like the milk loaf. It smell wonderful is you like the buttery smell. Try that is you don't already try it.

Thanks cocoa. I've been waiting to try the Hokkaido Milk Loaf but yogurt bread jumped queue as I had 2 cups of yogurt in the fridge last week. I may use Tang Zhong (the current bread craze) to make the milk loaf, still jittery and I dislike having a dent at the base of my loaf so I may bake it in my oven. However, that takes some estimatiion :S

This is the best recipe I've tried so far and definitely a keeper. It remains soft even after 3 days. Yours looks great!

thanks bernice for your compliments. i gave my loaf to my parents and mom told me that it was yummy. i wasn't sure if she was being supportive (like all moms) or it was really that good. guess would have to bake another to find out. forgot to buy cream cheese just now, duh!
